Braised Beef Recipe

Ingredients
  • 3 tbsps vegetable oil .
  • 1 c beef stock .
  • 1/4 tsp paprika (to taste) .
  • salt & pepper .
  • 1/2 c dry red wine .
  • 2 tbsps all-purpose flour .
  • 3 lbs rump roast .
  • 1 bay leaf .
  • 1 tsp tomato paste .
  • 8 slices bacon, sliced, uncooked .
  • 1 tbsp prepared mustard .
  • 1/4 tsp parsley (to taste) .
  • 1/2 c whipping cream or sour cream .
  • 2 onions, coarsely sliced .
  • 1/4 tsp thyme (to taste) .
  • water

Directions
  • Step #1 Rub beef generously, with salt, all over, pepper & mustard.
  • Step #2 Sautee the bacon in large heavy pan.
  • Step #3 Remove bacon.
  • Step #4 Add oil.
  • Step #5 When hot, add the beef & brown evenly on all sides.
  • Step #6 Add the onions & herbs.
  • Step #7 Cook until the onions are nearly tender, tomato paste, wine, then add the paprika, stock & replace the bacon.
  • Step #8 Cover up the pot & let simmer 1 1/2 to 2 hrs, until tender.
  • Step #9 Remove & let it stand for 5 - 10 mins before carving.
  • Step #10 Meanwhile, stir the flour into small amount of water.
  • Step #11 Add this into hot cooking liquid.
  • Step #12 Stir constantly till thick.
  • Step #13 Stir in the cream of your choice (I liked it best with sour cream).
  • Step #14 Serve with mashed or fried potatoes.
