Step #2 If you need to toast the pecans, place pecans on baking sheet; bake 3-5 mins; set aside.
Step #3 In an 8-inch baking pan, spread sliced apples & sprinkle with sugar.
Step #4 Using a fork, cinnamon, stir in the pecans (unless you want to sprinkle them on top), flours, baking powder & baking soda until apples are coated.
Step #5 Use a rubber spatula to stir in the coffee, egg & vanilla, oil, scraping sides & bottom of pan.
Step #6 Smooth top this with spatula.
Step #7 If saving pecans, sprinkle it over top.
Step #8 Bake 45 to 50 mins or until wooden toothpick inserted in center comes out clean.
