Classy Chicken Recipe

Ingredients
  • 1/3 c fat-free sour cream
  • 1/2 c dry white wine
  • 1/2 c fat-free chicken broth
  • 4 boneless, skinless chicken breast halves
  • 2 tbsps butter or margarine
  • 1 tbsp Dijon mustard
  • 1 c all-purpose flour
  • 1 zucchini cut in half lengthwise, then sliced diagonally
  • 1 clove garlic
  • 5 sun-dried tomatoes, sliced
  • salt & pepper to taste
  • 1 tsp dill weed

Directions
  • Step #1 Place the flour into a shallow dish.
  • Step #2 Spice up chicken with salt & pepper, & then dredge in flour.
  • Step #3 Shake off excess.
  • Step #4 Heat the butter in a large skillet over medium-high heat.
  • Step #5 Brown the chicken breasts on each side, about 3 mins per side.
  • Step #6 Pour the chicken broth & white wine into the skillet, & scrape any chicken residue from the pan for flavor.
  • Step #7 Stir in the mustard.
  • Step #8 Cover, & cook for a few mins until chicken is 'springy', but not cooked through.
  • Step #9 Add the zucchini & sun-dried tomatoes, then season this with garlic & dill weed.
  • Step #10 Cover, & cook this until the zucchini is tender & the chicken is cooked through, about 5 to 10 mins.
  • Step #11 Remove the chicken to a platter, & remove the pan from the heat.
  • Step #12 Stir sour cream into the pan liquid.
  • Step #13 If most of the liquid has evaporated, stir in the a bit more wine or broth first.
  • Step #14 Spice up with salt to taste, & serve chicken with sauce poured over it.
