Corny Cornbread With Peppers Recipe

Ingredients
  • 12 oz corn .
  • 1 c all-purpose flour .
  • 1 (4 oz) can sliced jalapenos or green peppers .
  • 2-4 tbsps sugar .
  • 1 c milk .
  • 1/2 tsp salt .
  • 1 c cornmeal .
  • 1/4 c cooking oil or Crisco, melted .
  • 1 c shredded cheddar cheese or monterey jack cheese .
  • 1 tbsp baking powder .
  • 2 eggs

Directions
  • Step #1 Collect all ingredients.
  • Step #2 Drain your peppers & corn, set aside.
  • Step #3 If using frozen, thaw.
  • Step #4 Eggs should be at about room temp.
  • Step #5 In a medium sized mixing bowl, cornmeal, baking powder, stir this together the flour, & salt.
  • Step #6 In a separate small bowl, beat together eggs, milk, & oil or Crisco until frothy.
  • Step #7 Add the small bowl's wet ingredients to the medium sized bowl's dry ingredients until mixed together.
  • Step #8 (Do not over mix, it will be slightly lumpy).
  • Step #9 Pour into a 8x8 or 9x9 inch greased pan.
  • Step #10 Bake at 425' oven for 20 - 25 mins or until golden brown.
  • Step #11 Makes 8 - 9 smaller servings.
  • Step #12 *options are baking in a cast iron corn bread mold, ccake tin (similar time) or bundt pan (add time).
