Sweet Raspberry Muffins Recipe

Ingredients
  • 1/2 c confectioners' sugar .
  • 1/4 tsp vanilla .
  • 1/4 c butter, cold .
  • 1/4 c raspberry jam .
  • 2/3 c milk .
  • Glaze .
  • 2 c baking mix .
  • 2 tsps warm water .
  • 2 tbsps sugar

Directions
  • Step #1 In a bowl, mix baking mix & sugar.
  • Step #2 Cut in butter until the mixture resembles coarse crumbs.
  • Step #3 Stir in milk just until moistened (batter will be thick).
  • Step #4 Spoon about 1 tbsp of batter into each of 12 paper-lined muffin c.
  • Step #5 Top with 1 tsp of the jam.
  • Step #6 Spoon the remaining batter (about 1 T.
  • Step #7 each over the jam).
  • Step #8 Bake at 425°F for 12-14 mins or until lightly browned.
  • Step #9 Cool in pan for 5 mins.
  • Step #10 Meanwhile, in a small bowl, mix glaze ingredients until smooth.
  • Step #11 Remove muffins to a wire rack.
  • Step #12 Drizzle with glaze.
