Multigrain Baking Mix Recipe

Ingredients
  • 2 c pecans, toasted & finely sliced .
  • 1 1/2 c whole wheat flour .
  • 1/2 c buckwheat flour .
  • 2 c cornmeal (pref. stone-ground rather than degerminated) .
  • 4 c unbleached white flour .
  • 1/2 c wheat germ .
  • 4 tbsps baking powder .
  • 1 1/4 c canola oil (or some other mild tasting vegetable oil) .
  • 1/2 c soy flour .
  • 2 tbsps baking soda .
  • 1 1/2 c dry buttermilk .
  • 2 tbsps sea salt

Directions
  • Step #1 In a 4-quart mixing bowl, mix all ingredients except the canola oil.
  • Step #2 Stir oil into dry ingredients & mix well.
  • Step #3 Store in large air-tight container or several smaller ones in fridge or freezer.
