Peanut Brittle Recipe

Ingredients
  • 1 tbsp butter .
  • 1 1/2 c raw peanuts .
  • 1 tsp baking soda .
  • 1/2 c light corn syrup .
  • 1/4 tsp salt .
  • 1 c sugar .
  • 1 tsp vanilla extract

Directions
  • Step #1 Combine peanuts, sugar, corn syrup, & salt in Dutch oven.
  • Step #2 Cook over low heat/flame, stirring carefully until sugar dissolves.
  • Step #3 Cover up & cook over med-heat/flame 2 to 3 mins to wash down sugar crystals from sides of pan.
  • Step #4 Uncover & cook, stirring every once in awhile, to hard crack stage (300F).
  • Step #5 Stir in butter, soda, & vanilla.
  • Step #6 Pour into buttered 15-x10-x1 inch jellyroll pan, spreading thinly.
  • Step #7 Let cool.
  • Step #8 Break into pieces.
