Coconut Candy Recipe

Ingredients
  • 1/2 c evaporated milk .
  • 390 g freshly grated coconut .
  • 1 tsp salt .
  • 340 g sugar .
  • 1 tsp vanilla .
  • 2 tbsps condensed milk .
  • food coloring .
  • 1 tsp butter

Directions
  • Step #1 Place sugar, salt, & both milks in a wok on low heat & dissolve sugar.
  • Step #2 Add in grated coconut & cook for 2 hrs, stirring often.
  • Step #3 Add in vanilla & butter.
  • Step #4 Divide into 4 parts & color each part to your liking.
  • Step #5 Grease four small square pans very very well.
  • Step #6 Place each portion of coconut into its own tray & press down firmly with the aid of some plastic wrap.
  • Step #7 Make sure it is compressed.
  • Step #8 Leave to set for a while & then turn out & cut into squares before it has fully hardened.
