Spinach Balls Recipe

Ingredients
  • 1 onion, finely sliced .
  • 1 bunch fresh spinach, sliced .
  • 2 garlic cloves .
  • 1 1/2 c arborio rice .
  • 1 tbsp tomato paste .
  • 1/4-1/2 c grated cheese .
  • breadcrumbs .
  • 1 tbsp olive oil .
  • 1 tbsp parmesan cheese .
  • 3-3 1/2 c chicken stock

Directions
  • Step #1 Cook onions in little oil over moderate heat until transparent.
  • Step #2 Add rice, stir over heat for 10 seconds.
  • Step #3 Add 1 c of stock & stir.
  • Step #4 Add tomato paste, garlic & stir through.
  • Step #5 Simmer until liquid is almost absorbed.
  • Step #6 Add next c of stock & repeat process.
  • Step #7 When final c of stock is almost absorbed add spinach & stir through.
  • Step #8 Simmer covered until liquid is absorbed & rice is cooked (a little extra water may be required depending upon rice texture).
  • Step #9 Finally add cheese & mix through.
  • Step #10 Refrigerate until cold.
  • Step #11 Roll into balls & coat with bread crumbs.
  • Step #12 At this stage they may be frozen.
  • Step #13 Freeze well for up to 1 month.
  • Step #14 To serve, bake in oven, or lightly pan fry until heated through & golden brown.
  • Step #15 Serve with homemade or store bought tzatziki (yoghurt dip).
