Concord Grape Piei Recipe

Ingredients
  • 1/8 tsp salt
  • 1 c white sugar
  • 1 (9 inch) pie shell
  • 1/2 c packed brown sugar
  •  
  • 1/4 c butter
  • 2 tsps lemon juice
  • 1/2 c quick cooking oats
  • 4 1/2 c Concord grapes
  • 1/4 c all-purpose flour
  • 1/4 c all-purpose flour

Directions
  • Step #1 Preheat oven to 425F degrees F (220 degrees C).
  • Step #2 Squeeze the end of each grape opposite the stem to separate skins from pulp.
  • Step #3 Set skins aside.
  • Step #4 Place pulp in a medium saucepan, & cook, stirring, bring to a boil, for 1 min.
  • Step #5 Press through a strainer or food mill to remove seeds.
  • Step #6 Combine pulp, skins, sugar, flour, lemon juice & salt.
  • Step #7 Pour into pastry shell.
  • Step #8 Combine oats, brown sugar & flour; cut in butter until crumbly.
  • Step #9 Sprinkle top over filling.
  • Step #10 Cover edges of pastry with foil.
  • Step #11 Bake at 425F degrees F (220 degrees C) for 15 mins.
  • Step #12 Remove foil, & bake 20 mins more or until golden brown.
  • Step #13 Cool on a wire rack.
