Coffee Shortbread Recipe

Ingredients
  • 1/4 c dried cranberries .
  • 1 tbsp ground coffee, toasted .
  • 1 1/2 c butter .
  • 1 egg, beaten (egg wash) .
  • 1 c granulated sugar .
  • 1/4 c brewed coffee, room temperature (A dark roast gives the best flavour, but use what you have on hand.) .
  • 1/4 c dried cranberries, sliced (optional) .
  • 2 1/2 c all-purpose flour .
  • 1 tbsp granulated sugar

Directions
  • Step #1 Set aside 1/4 c of your morning coffee to cool.
  • Step #2 Spread the ground coffee on a baking sheet lined with parchment paper, bake in oven at 350 F for about 6 mins, or until toasted.
  • Step #3 Cool to about room temp.
  • Step #4 Cream the butter & sugar together, then add the brewed coffee.
  • Step #5 Add the flour, toasted coffee grounds & sliced cranberries, if using, mixing until it is all mixd.
  • Step #6 Be careful not to overwork the dough.
  • Step #7 Roll out the dough to a 1/2 inch thickness.
  • Step #8 Cut into any shape using cookie cutters.
  • Step #9 Place on a baking tray lined with parchment paper.
  • Step #10 Brush the cookies with the egg wash, sprinkle with sugar & press a dried cranberry into the center of each cookie.
  • Step #11 Bake at 300F F for approximately 20 mins.
