Cod, Chickpea & Olive Stew Recipe

Ingredients
  • 100 ml white wine .
  • 2 bay leaves .
  • 600 g chickpeas .
  • 2 garlic cloves, thinly sliced .
  • 1 tbsp olive oil .
  • 4 cod fish fillets, skinned, boned & cut into chunks .
  • 2 tbsps sliced black olives .
  • 200 ml water .
  • 600 g sliced tomatoes .
  • 1 onion, sliced

Directions
  • Step #1 Fry the onions in the olive oil until softened.
  • Step #2 Add the garlic, & the bay leaves, white wine, simmer until reduced slightly.
  • Step #3 Add the tomatoes, chickpeas, olives, salt & pepper (to taste) & the water.
  • Step #4 Simmer for 15 mins.
  • Step #5 Add the cod (cut into bite size chunks) & let simmer for 6 to 8 mins.
