Raspberry Gravy Recipe

Ingredients
  • 2 (10 oz) packages frozen unsweetened raspberries, thawed .
  • 1/2 c raspberry jelly .
  • 1 lemon, zest of .
  • 1/4 c lemon juice .
  • 10 1/2 oz condensed beef broth .
  • salt & pepper

Directions
  • Step #1 Drain raspberries.
  • Step #2 (Reserve juice for another use.
  • Step #3 ) Run through food mill to remove seeds, if desired.
  • Step #4 When poultry is removed to platter, pour drippings from roasting pan into medium bowl.
  • Step #5 Let stand a few mins until fat separates from meat juice.
  • Step #6 Stir undiluted bouillon, jelly, lemon peel & lemon juice into roasting pan.
  • Step #7 Spoon fat from drippings.
  • Step #8 Discard.
  • Step #9 Add poultry juices to pan & cook over medium heat until hot & bubbly, stirring constantly to loosen browned bits.
  • Step #10 Stir in raspberries (or puréed pulp, if you used a food mill).
  • Step #11 Add salt & pepper to taste.
  • Step #12 Heat through.
  • Step #13 Serve over sliced poultry.
