Step #1 Combine first 3 ingredients in a medium bowl; set aside.
Step #2 Beat egg yolk; add milk, lemon rind, & juice.
Step #3 Add to dry ingredients, & mix well.
Step #4 Beat egg white (at about room temp) until soft peaks form; fold into milk mixture.
Step #5 Pour into 2 lightly greased 10-oz custard c; place this in a pan of warm water.
Step #6 Bake at 350°F for 30 to 35 mins or until a knife inserted in center comes out clean.
Step #7 Serve warm; top this with whipped cream, if desired.
