Lemon Pudding Cake Recipe

Ingredients
  • 1 tbsp lemon juice .
  • 1 egg, separated .
  • whipped cream (optional) .
  • 1 1/2 tsps grated lemon rind .
  • 1/2 c milk .
  • 2 1/2 tbsps rice flour .
  • 1/8 tsp salt .
  • 1 tbsp stevia

Directions
  • Step #1 Combine first 3 ingredients in a medium bowl; set aside.
  • Step #2 Beat egg yolk; add milk, lemon rind, & juice.
  • Step #3 Add to dry ingredients, & mix well.
  • Step #4 Beat egg white (at about room temp) until soft peaks form; fold into milk mixture.
  • Step #5 Pour into 2 lightly greased 10-oz custard c; place this in a pan of warm water.
  • Step #6 Bake at 350°F for 30 to 35 mins or until a knife inserted in center comes out clean.
  • Step #7 Serve warm; top this with whipped cream, if desired.
