A-maize-ing Cornbread Recipe

Ingredients
  • 3/4 c buttermilk .
  • 1/2 c low fat cottage cheese (1%) .
  • 2 tbsps honey .
  • 2 tbsps butter, melted .
  • 1 egg, lightly beaten .
  • 1/4 tsp salt .
  • 2 tsps baking powder .
  • 1 (4 oz) can sliced green chilies, drained .
  • 1 c whole kernel corn (thaw first if using frozen) .
  • 1 c cornmeal .
  • 1 tsp baking soda .
  • 1 1/4 c all-purpose flour

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 In a large bow, mix flour,baking soda, cornmeal, baking powder, & salt.
  • Step #3 Mix well.
  • Step #4 In a medium bowl, honey, butter chilies, mix buttermilk, egg cottage cheese, & corn.
  • Step #5 Beat with a whisk until well mixed.
  • Step #6 Add wet/corn ingredients to flour mixture & stir until dry ingredients are moistened.
  • Step #7 Pour batter into an 8X8 inch bakng pan that has been sprayed with non-stick spray.
  • Step #8 Bake for 35 mins or until a wooden toothpick inserted in cente comes out clean.
  • Step #9 Cut into 9 squares & serve warm.
