Squash Casserole Recipe

Ingredients
  • 1 (10 1/2 oz) can cream of celery soup .
  • 1 medium onion, quartered & cut in 1/4-inch slices .
  • 1 egg, beaten .
  • salt & freshly ground black pepper, to taste .
  • 1/2 c fresh breadcrumbs .
  • 4 medium summer squash, cut in 1/4-inch slices .
  • 4 oz grated cheddar cheese .
  • 5 tbsps butter, divided .
  • 6 oz cream cheese, softened

Directions
  • Step #1 Melt 2 tbsps butter in a skillet over med-heat/flame.
  • Step #2 Add the bread crumbs & cook, stirring constantly, until crumbs turn golden brown.
  • Step #3 Remove from heat & set aside.
  • Step #4 Melt remaining butter In a large-ish covered saucepan over medium-high heat.
  • Step #5 Add squash & onion to pan & sauté for a couple of mins.
  • Step #6 Spice up with salt & freshly ground black pepper.
  • Step #7 Reduce heat to medium & cover pan.
  • Step #8 Cook until onions are translucent.
  • Step #9 In a separate saucepan, mix cream cheese & cream of celery soup.
  • Step #10 Cook over medium-low heat until cream cheese is melted & can be stirred into soup.
  • Step #11 Remove from heat.
  • Step #12 Add egg & mix well.
  • Step #13 Stir in grated cheddar cheese.
  • Step #14 Fold sauce into squash & pour this into a buttered casserole dish.
  • Step #15 Sprinkle top top of casserole with reserved bread crumbs.
  • Step #16 Bake at 350°F 35-45 mins or until bubbly & brown on top.
