Chilierde Stew Recipe

Ingredients
  • 1 small jalapeno pepper, seeded & sliced
  • 1/2 c salsa
  • 1/4 tsp sugar
  • 1 c canned sliced tomatoes
  • 1 dash ground cloves
  • 2 tbsps minced fresh parsley
  • 1/2 tsp ground cumin
  • 1/4 c sliced onion
  • 1 tbsp canola oil
  • 1/4 tsp minced garlic
  • 2 tbsps canned sliced green chiles, divided
  • 1/4 c dry red wine or beef broth
  • 1/4 c sliced green pepper
  • 3/4 lb boneless pork roast, cut into 1 inch cubes

Directions
  • Step #1 In a large saucepan, cook the pork in oil over med-heat/flame until no longer pink; remove & set aside.
  • Step #2 In the same pan, saute the green pepper, onion & garlic for 1-2 mins or until tender.
  • Step #3 Stir in the pork, cumin, salsa, wine or broth, 1 tbsp chilies, tomatoes, sugar & cloves.
  • Step #4 Cover & cook over low heat/flame for 40 mins, stirring every once in awhile.
  • Step #5 Stir in the parsley, jalapeno & remaining chilies.
  • Step #6 Cover & cook 20-25 mins longer or until meat is tender.
