Corn Chowder Recipe

Ingredients
  • 2 c milk .
  • 1 tbsp pepper, freshly ground .
  • 2 tbsps butter, unsalted .
  • 2 tbsps flour .
  • 1 (12 oz) bag carrots, petite fresh raw .
  • 1/2 c whipping cream, heavy room temperature .
  • 1 (28 oz) bag frozen corn, sweet kernels .
  • 1 tsp salt, ground sea salt .
  • 5 yukon gold potatoes, peeled & sliced .
  • 2 c hot water .
  • 3 medium onions, sliced, raw

Directions
  • Step #1 Melt butter in large stock pot,on medium high heat.
  • Step #2 add sliced onions, stir this to coat onions in butter & let saute for 2 mins.
  • Step #3 add the carrots.
  • Step #4 stir this to mix & let saute for another 5 mins.
  • Step #5 Peel & dice the potatoes to about 1 inch pieces then add to the onion/carrot mixture.
  • Step #6 stir in the the potatoes.
  • Step #7 add the hot water & stir.
  • Step #8 add the milk & stir.
  • Step #9 add the frozen corn & stir.
  • Step #10 make sure liquid covers potatoes, if not add equal parts milk & hot water.
  • Step #11 cover & stir every once in awhile on medium heat for 25 mins.
  • Step #12 mix the flour & whipping cream in a mixing c & let this stand at about room temp while the potatoes cook.
  • Step #13 uncover pot & add the pepper & salt, stir well & make sure potatoes are done, when they are to your liking.
  • Step #14 add flour & whipping cream mixture to soup & stir well to thicken.
  • Step #15 stirring every once in awhile allow soup to thicken for 15 mins on medium heat.
  • Step #16 if you like a thinner soup add more milk, or thicker soup allow to cook another 5 mins.
