Cornish Splits Recipe

Ingredients
  • 1/4 tsp salt
  • 1 tbsp white sugar
  • 2 tbsps butter, melted & cooled
  • 1 tsp active dry yeast
  • 3 c unbleached all-purpose flour
  • 1 1/4 c lukewarm milk

Directions
  • Step #1 In a small bowl, dissolve the yeast in the milk & add the sugar.
  • Step #2 In another bowl, sift the flour & salt together & add the cooled melted butter.
  • Step #3 Add the yeast mixture to the flour mixture, & turn out onto a floured counter & knead until the dough is smooth & elastic.
  • Step #4 Place the dough in an oiled bowl, cover with a clean towel & let rise in a warm, draft free place to 45 mins.
  • Step #5 Turn dough out onto the freshly floured board & shape into 9 balls.
  • Step #6 Place dough balls into a buttered & floured 9 inch square pan.
  • Step #7 Let them sit, covered for another 15 mins to rise again.
  • Step #8 Preheat the oven to 425F degrees F (220 degrees C).
  • Step #9 Bake for 15-20 mins until browned & puffed.
  • Step #10 Split open & serve warm.
