Cheesy Mashed Cauliflower Recipe

Ingredients
  • 1/3 c boursin cheese or other garlic & herb spreadable cheese .
  • 1/4 c grated parmigiano-reggiano cheese or romano cheese .
  • 3 tbsps chives, sliced .
  • 1 c chicken broth .
  • 1 large head cauliflower .
  • 1/8 tsp grated nutmeg

Directions
  • Step #1 Add chicken stock & 1 tbsp of extra-virgin olive oil, 1 turn of the pan, to a deep pot.
  • Step #2 Trim away greens & stems from the base of cauliflower.
  • Step #3 Cut away the core with a sharp paring knife.
  • Step #4 Set cored head into pot with broth.
  • Step #5 Cover up pot & bring liquid to a boil.
  • Step #6 Reduce heat to medium low & cook cauliflower, until tender, covered, 8 to 10 mins.
  • Step #7 Uncover the pot & mash the cauliflower.
  • Step #8 Let some liquid cook off as you smash the cheeses into the cauliflower.
  • Step #9 As the mixture thickens, turn off heat & season this with salt, pepper & nutmeg.
  • Step #10 Stir in chives & transfer cauliflower to as serving dish.
