Raspberry Tiramisu Recipe

Ingredients
  • 1 tsp pure vanilla extract .
  • confectioners' sugar, for serving .
  • 1/4 c sugar .
  • 1 c whipping cream .
  • 1 c seedless raspberry jam .
  • 6 tbsps orange liqueur (recommended ( Grand Marnier) .
  • 1 lb mascarpone cheese, at about room temp .
  • 3 3/4 c fresh raspberries (3 baskets) .
  • 28 soft ladyfingers (or cake, cut into 3 by 1 by 1 1/2-inch pieces)

Directions
  • Step #1 Stir the jam & 4 tbsps of the orange liqueur in a small bowl to mix.
  • Step #2 Combine the mascarpone & remaining 2 tbsps of orange liqueur In a large-ish bowl to mix.
  • Step #3 Using an electric mixer, beat the cream, sugar, & vanilla in another large bowl until soft peaks form.
  • Step #4 Using a large rubber spatula, stir 1/4 of the whipped cream into the mascarpone mixture to lighten.
  • Step #5 Fold the remaining whipped cream into the mascarpone mixture.
  • Step #6 Line the bottom of a 13 by 9 by 2-inch glass baking dish or other decorative serving dish with half of the ladyfingers.
  • Step #7 Spread half of the jam mixture over the ladyfingers.
  • Step #8 Spread half of the mascarpone mixture over the jam mixture, then cover with half of the fresh raspberries.
  • Step #9 Repeat layering with the remaining ladyfingers, jam mixture, mascarpone mixture & raspberries.
  • Step #10 Cover up & put in the fridge at least 3 hrs or overnight.
  • Step #11 Dust with the confectioners' sugar just prior to serving.
