Ingredients
1 medium red onion, sliced .
1 lb sweet Italian sausage or hot Italian sausage, casings removed .
1/2 tsp salt .
1/2 tsp dried oregano leaves, crumbled .
12 eggs, beaten .
1/2 tsp fresh ground pepper .
2 medium tomatoes, peeled & sliced .
1 tbsp butter .
8 mushrooms, sliced .
1 c milk .
8 oz mozzarella cheese, shredded
Directions
Step #1 Preheat oven to 400°F.
Step #2 Generously grease large oven proof skillet or large shallow baking dish; set aside.
Step #3 Crumble sausage into skillet & fry over medium high heat, stirring constantly, until sausage is no longer pink; drain well & transfer to bowl.
Step #4 Wipe out skillet.
Step #5 Add butter & melt over med-heat/flame.
Step #6 Add mushrooms & onion & sauté until onion is soft but not brown.
Step #7 Stir into sausage.
Step #8 Blend in remaining ingredients, mixing thoroughly.
Step #9 Turn into prepared dish.
Step #10 Bake until knife inserted in center comes out clean, about 30 to 34 mins.
