Ingredients
  • 2 2/3 c white sugar
  • 1 tsp vanilla extract
  • 2 egg whites
  • 2/3 c light corn syrup
  • 2/3 c sliced walnuts (optional)
  • 1/2 c water

Directions
  • Step #1 Cook sugar, & water in a 2-quart pot over low heat/flame, stirring constantly, corn syrup, until sugar is dissolved.
  • Step #2 (On humid days, use 1 tbsp less water.
  • Step #3 ) Cook, without stirring, to 260 degrees on candy thermometer (or hard ball stage).
  • Step #4 Beat egg whites in 1-1/2-quart bowl until stiff peaks form.
  • Step #5 Continue to beat while pouring hot syrup in a thin stream into egg whites.
  • Step #6 Add vanilla; beat until mixture holds its shape & becomes slightly dull.
  • Step #7 (Mixture may become too stiff for electric mixer).
  • Step #8 Fold in nuts (if you choose).
  • Step #9 Drop from buttered spoon onto waxed paper.
  • Step #10 Let stand at about room temp, turning candy over once, until outside of candy is firm--at least 12 hrs.
  • Step #11 Store in airtight container.
