Choctaw Catfish Recipe

Ingredients
  • 4 (4 oz) fillets catfish
  • 1 c yellow cornmeal
  • 1 tbsp steak seasoning
  • 2 c buttermilk
  • 1/2 tbsp onion salt
  • 1/4 c vegetable oil

Directions
  • Step #1 In a medium bowl, place catfish fillets in buttermilk.
  • Step #2 Cover, & marinate in the refrigerator 45 mins.
  • Step #3 In a resealable plastic bag, mix cornmeal, onion salt, & steak seasoning.
  • Step #4 One at a time, drain catfish fillets & place this in the bag to coat with the cornmeal mixture.
  • Step #5 Heat oil in a large, heavy skillet over med-heat/flame.
  • Step #6 Fry each fillet 7-10 mins per side, or until exterior is lightly browned & flesh is easily flaked with a fork.
  • Step #7 Drain on paper towels.
