Cioppino Recipe

Ingredients
  • 2 bay leaves
  • 1 1/2 lbs cod fillets, cubed
  • 1 c water
  • 1 tbsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 1/2 c white wine
  • 1 1/2 lbs bay scallops
  • 18 mussels, cleaned & debearded
  • 2 cloves garlic, minced
  • 3/4 c butter
  • 1 1/2 lbs large shrimp - peeled & deveined
  • 1 bunch fresh parsley, sliced
  • 2 onions, sliced
  • 1 1/2 c crabmeat
  • 2 (14.5 oz) cans stewed tomatoes
  • 18 small clams
  • 2 (14.5 oz) cans chicken broth

Directions
  • Step #1 Over medium-low heat melt butter in a large stockpot, add onions, garlic & parsley.
  • Step #2 Cook slowly, stirring every once in awhile until onions are soft.
  • Step #3 Add tomatoes to the pot (break them into chunks as you add them).
  • Step #4 Add chicken broth, bay leaves, thyme, basil, oregano, water & wine.
  • Step #5 Mix well.
  • Step #6 Cover & let simmer 30 mins.
  • Step #7 Stir in the shrimp, clams, scallops, mussels & crabmeat.
  • Step #8 Stir in fish, if desired.
  • Step #9 Bring to boil.
  • Step #10 Lower heat, cover & let simmer 5 to 7 mins until clams open.
  • Step #11 Ladle soup into bowls & serve this with warm, crusty bread!.
