Ingredients
  • 1 1/2 c all-purpose flour
  •  
  • 1 1/2 c water
  • 1 tsp baking soda
  • 1/2 c butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 c dates, pitted & sliced
  • 2 tbsps heavy cream
  • 1 1/2 c raisins
  • 3/4 c white sugar
  • 1/2 c sliced walnuts
  • 1/4 tsp salt
  • 4 tbsps butter
  • 1/2 c brown sugar

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 9 inch square pan.
  • Step #3 In a saucepan, mix water & raisins.
  • Step #4 Bring to a boil & cook for 5 mins.
  • Step #5 Remove from heat & stir in the sliced dates & baking soda.
  • Step #6 Set aside.
  • Step #7 In a large bowl, cream together 1/2 c butter & 3/4 c white sugar until light & fluffy.
  • Step #8 Beat in the eggs one at a time, then stir in the the vanilla.
  • Step #9 Beat in the flour, salt & date mixture.
  • Step #10 Pour batter into prepared pan.
  • Step #11 Bake in the preheated oven for 45 mins, or until a toothpick inserted into the center of the cake comes out clean.
  • Step #12 Remove cake from oven, & set oven to Broil.
  • Step #13 Make Topping: In a saucepan, melt 4 tbsps of butter.
  • Step #14 Stir in brown sugar, cream & sliced nuts.
  • Step #15 Spread mixture over warm cake & place under broiler until lightly browned, about 3 mins.
  • Step #16 Watch carefully - it burns easily under the broiler.
  • Step #17 Cool before serving.
