Ultimate Beef Stew Recipe

Ingredients
  • 8 fresh thyme sprigs .
  • kosher salt .
  • ground black pepper .
  • 1/4 c extra virgin olive oil .
  • 1/4 tsp ground cloves .
  • 2 bay leaves .
  • 9 small new potatoes, cut into bite size chunks .
  • 1/2 lb garden peas (frozen or fresh) .
  • 1 (750 ml) bottle wine (good quality dry red) .
  • 3 tbsps butter .
  • 2 c frozen pearl onions, a large handful (I use one sliced yellow onion) .
  • fresh flat-leaf parsley, sliced, for garnish .
  • 1/2 lb carrots, peeled & sliced .
  • 6 garlic cloves, smashed .
  • 2 c flour .
  • 2 1/2 c beef stock .
  • 1 orange, zest of, zest removed in 3 .
  • 2-3 lbs beef boneless beef chuck shoulder pot roast, cut into 2 inch pieces

Directions
  • Step #1 Preheat a large heavy-bottomed sauce pan over medium high heat with oil & butter.
  • Step #2 While pan is heating, arrange flour on a large dish.
  • Step #3 Spice up the cubed beef with some salt & pepper, then toss to coat.
  • Step #4 Shake of excess flour, then add beef in a single layer to pan, being careful not to over crowd.
  • Step #5 You might have to work in batches.
  • Step #6 Thoroughly brown beef on all sides.
  • Step #7 Remove to a plate & reserve.
  • Step #8 Add wine to the pan & bring up to a simmer.
  • Step #9 Scrape the bottom of the pan to loosen tasty bits.
  • Step #10 Add meat once wine is hot.
  • Step #11 Add thyme, ground cloves, orange zest strip, salt & pepper to taste, smashed garlic, & bay leaves.
  • Step #12 Stir to mix.
  • Step #13 Add beef stock.
  • Step #14 Bring mixture to a boil then reduce to a simmer.
  • Step #15 Cook uncovered until the liquid starts to thicken, about 15-20 min.
  • Step #16 Cover up & cook on low heat for 2 1/2 hrs.
  • Step #17 After 2 hrs, carrots, onions, add potatoes, & a pinch of sugar to balance out the acid in the wine.
  • Step #18 Turn up heat & let simmer, uncovered for 30 mins, until the vegetables are tender.
  • Step #19 Add the peas during the last min of cooking.
  • Step #20 Spice up with salt & pepper.
  • Step #21 Remove thyme sprigs & orange peel.
  • Step #22 Serve with crusty peasant bread.
  • Step #23 Garnish with fresh sliced parsley.
