Chiles Rellenos Cups Recipe

Ingredients
  • 2 tbsps hot sauce, more if desired .
  • pimentos, sliced (to garnish) (optional) .
  • cooking spray .
  • 1/3 c ricotta cheese .
  • 1 c cheddar cheese, shredded .
  • 1/4 c canned green chilies, drained & sliced .
  • 48 sliced ripe olives, black .
  • 1/4 tsp cumin .
  • 24 wonton skins .
  • 1 tsp scallions, minced

Directions
  • Step #1 Spray two miniature muffin tins with cooking spray.
  • Step #2 With a 3-inch cookie cutter, cut wonton skins into circles.
  • Step #3 Place one circle in each muffin c; mold it to the c.
  • Step #4 (You could leave them square as well, but they fit better circular.
  • Step #5 ).
  • Step #6 Spray lightly with extra cooking spray.
  • Step #7 Bake at 350ºF.
  • Step #8 for 7 to 8 mins or until golden brown.
  • Step #9 Remove from tins & place on cookie sheet(s).
  • Step #10 Combine cheeses, hot sauce, chiles, green onion, & cumin in medium bowl; mix well.
  • Step #11 Fill each c with 2 tsp of the cheese filling & top each with two olive slices.
  • Step #12 Bake for 10 mins or until bubbly.
  • Step #13 Top with pimento & serve warm.
