Beans With Small Shell Pasta Recipe

Ingredients
  • 1/4 tsp crushed red pepper flakes (to taste) .
  • 2 tbsps dried basil .
  • 1/2 c green bell peppers, sliced .
  • 1 tbsp garlic, finely sliced .
  • 1/4 c asiago cheese, finely shredded .
  • 1 (15 oz) can sliced tomatoes, undrained .
  • 1 1/3 c small shell pasta .
  • 1 (16 oz) can garbanzo beans, rinsed & drained .
  • 2 tsps olive oil .
  • 2 tbsps parsley flakes

Directions
  • Step #1 Cook pasta according to package directions, omitting salt & oil.
  • Step #2 Drain & set aside.
  • Step #3 Meanwhile, in a medium saucepan, heat olive oil over med-heat/flame.
  • Step #4 Add bell pepper & garlic.
  • Step #5 Cook, until vegetables are soft, stirring every once in awhile, 3 to 5 mins.
  • Step #6 Add tomatoes & hot pepper flakes.
  • Step #7 Bring to a boil over high heat.
  • Step #8 Reduce heat & let simmer, uncovered, 10 mins.
  • Step #9 Stir in beans, basil, & parsley.
  • Step #10 Cook until beans are heated through, about 2 mins, stirring every once in awhile.
  • Step #11 Stir in cooked pasta & heat through.
  • Step #12 Spoon into serving bowls & top each with Asiago cheese.
