Tropical Fruit Cake Recipe

Ingredients
  • 1 c maraschino cherries (drain very well) .
  • 1/4 lb candied green cherries (no mint flavor) .
  • 1 tsp vanilla .
  • 1 tbsp butter .
  • 1 lb brazil nuts (uncracked) .
  • 3 eggs .
  • 2 (7 1/4 oz) packages dates (whole & no pits) .
  • 3/4 c sugar .
  • 1/2 tsp salt .
  • 3/4 c flour .
  • 1/2 tsp almond flavoring .
  • 1/2 tsp baking powder

Directions
  • Step #1 Cover up brazil nuts with water & boil for 3 mins; drain & crack.
  • Step #2 Put the nuts, dates, & both cherries into a bowl.
  • Step #3 Sift the flour, sugar, baking powder, & salt over the fruit mixture.
  • Step #4 Mix well with hands till all the ingredients are coated.
  • Step #5 Beat the eggs in a separate bowl till frothy & add the vanilla & almond.
  • Step #6 Mix this with the batter.
  • Step #7 Line a bread pan with foil wrap very neatly & grease & flour it.
  • Step #8 Dump the batter into the pan & bake 300F degree oven for 1 hr & 40 mins.
  • Step #9 Cover up with foil wrap the last part of baking.
  • Step #10 Leave in pan to cool & then the foil wrap should come out easily.
  • Step #11 Make 3-4 days ahead before serving.
  • Step #12 Wrap in plastic wrap.
