Chilli Plum Beef Recipe

Ingredients
  • 2 tsps dry sherry .
  • 2 tbsps oil .
  • 750 g rump steak .
  • 125 ml water .
  • 1 tbsp soy sauce .
  • 2 tsps cornflour, extra .
  • 2/3 c plum sauce .
  • 2 tsps cornflour (cornstarch) .
  • 1 tsp fresh ginger, grated .
  • 2 tsps sugar .
  • 1/2 tsp fresh red chili, sliced .
  • 1 small beef stock cube, crumbled .
  • 1 garlic clove, crushed

Directions
  • Step #1 Trim beef, slice thinly.
  • Step #2 Combine beef, sugar, ginger, garlic, chilli, sauces, sherry & cornflour In a large-ish bowl.
  • Step #3 Cover up, marinate for 30 mins or overnight.
  • Step #4 Drain beef & reserve marinade.
  • Step #5 Heat a little oil in a wok, add beef in batches, stir-fry until browned.
  • Step #6 Remove from wok as each batch is cooked.
  • Step #7 Repeat with remaining oil & beef.
  • Step #8 Return beef to wok with reserved marinade, mixed extra cornflour & water & the stock cube.
  • Step #9 Stir until mixture boils & thickens.
  • Step #10 Serve with rice.
