Roasted Beets Recipe

Ingredients
  • 2 tbsps olive oil .
  • 12 beets .
  • 2 tbsps raspberry vinegar .
  • 1 1/2 tsps fresh thyme leaves, minced .
  • 1/4 c orange juice .
  • 1 tsp sea salt .
  • 1 tsp fresh ground black pepper

Directions
  • Step #1 Preheat the oven to 400F degrees.
  • Step #2 Remove the tops & the roots of the beets & peel with a vegetable peeler.
  • Step #3 Cut the beets in 1 ½ inch chunks.
  • Step #4 (Small beets can be halved, medium ones cut in quarters, & large beets cut in eighths).
  • Step #5 Place the cut beets on a baking sheet & toss with the olive oil, thyme leaves, salt, & pepper.
  • Step #6 Roast for 35 to 40 mins, turning once or twice with a spatula, until the beets are tender.
  • Step #7 Remove from the oven & as soon as possible toss with the vinegar & orange juice.
  • Step #8 Sprinkle top with salt & pepper & serve warm.
