Breaded Chicken Cutlets Recipe

Ingredients
  • 1/2 c plain dried breadcrumbs .
  • coarse salt .
  • 4 tbsps olive oil .
  • fresh ground black pepper .
  • 1 large egg .
  • 1/4 c all-purpose flour .
  • 8 chicken cutlets (1 1/2 lb.)

Directions
  • Step #1 In a shallow dish, mix flour with a pinch of salt.
  • Step #2 In another dish, 1 tbsps water, whisk together egg, & a pinch of salt.
  • Step #3 In a third dish, 1/2 tsps salt, stir this together breadcrumbs, & 1/4 tsps black pepper.
  • Step #4 Working with one cutlet at a time, dredge cutlet in flour to coat completely, then shake off excess flour.
  • Step #5 Dip floured chicken in the egg mixture, turning to coat completely.
  • Step #6 Let excess drip off.
  • Step #7 Place cutlet in breadcrumb mixture, patting it in & turning it coat both sides.
  • Step #8 Shake off any excess crumbs before proceeding.
  • Step #9 In a large nonstick skillet, heat 2 tbsps oil over medium; swirl to coat pan.
  • Step #10 Add 4 cutlets; cook this until golden brown & no longer pink in the center, 2-3 mins per side.
  • Step #11 Remove.
  • Step #12 Repeat with remaining oil & chicken.
  • Step #13 Remove cutlets to serving tray.
  • Step #14 Squeeze juice of two lemons into bottom of skillet, add 2 tbsps butter & swirl until melted, scraping up any browned bits.
  • Step #15 Serve sauce with cutlets.
