Puffed Pancake Recipe

Ingredients
  • 1 c unbleached flour .
  • 1/4 tsp cinnamon .
  • 6 tbsps butter or margarine, melted .
  • 6 eggs .
  • 3 tbsps granulated sugar .
  • 1 tsp vanilla .
  • 1 1/2 c milk

Directions
  • Step #1 Preheat the oven to 425°F.
  • Step #2 You will need a 12-inch cast iron skillet, or oven-proof skillet, & a mixer.
  • Step #3 In a mixer at medium speed, vanilla, mix together the eggs, milk, flour, until just mixd, granulated sugar, & cinnamon, about 15 seconds.
  • Step #4 The batter should be a little bit lumpy.
  • Step #5 Melt the butter or margarine in a 12-inch cast iron skillet by putting it in the hot oven for about 30 seconds.
  • Step #6 Remove the skillet from the oven, spread the butter to coat the bottom & sides of the skillet, & pour in the batter.
  • Step #7 Return the skillet to the center oven rack & bake for about 20 mins, or until the pancake is puffed & lightly browned.
  • Step #8 Note: (Do not check before 17 mins have passed & close the oven door slowly & carefully after checking).
