Ingredients
  • 2 large gingerroot .
  • 1 c rice wine vinegar .
  • 5-7 tbsps sugar .
  • 1 tsp salt

Directions
  • Step #1 Peel the ginger root.
  • Step #2 Cut the ginger into medium-sized pieces & salt it.
  • Step #3 Leave the ginger in a bowl for 30 min Put the ginger into a jar.
  • Step #4 Mix rice vinegar & sugar in a pan & bring to a boil.
  • Step #5 Pour the hot mixture of vinegar & sugar on the ginger.
  • Step #6 Cool, then cover with a lid & place this in the refrigerator.
  • Step #7 In a week, the ginger change its color to light pink.
  • Step #8 Slice thinly to serve.
  • Step #9 The pickled ginger lasts about a month in the fridge.
