Pineapple Coconut Bars Recipe

Ingredients
  • 1 egg, beaten .
  • 18 1/4 oz yellow cake mix .
  • 1 c walnuts, sliced .
  • 1 1/2 c oatmeal .
  • 1 c flaked coconut .
  • 1 c white chocolate chips .
  • 1/2 tsp ground nutmeg .
  • 14 oz condensed milk .
  • 1/2 c flour .
  • 8 oz crushed pineapple, well drained .
  • 1/2 c butter, softened

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Spray a 13 x 9 pan with Bakers Joy or lightly grease & flour.
  • Step #3 In a large bowl mix the cake mix, oatmeal, butter, & egg until mixture is crumbly.
  • Step #4 Set aside 1 1/2 c of crumb mixture.
  • Step #5 Press rest of crumb mixture in to bottom of pan.
  • Step #6 In a medium bowl, pineapple, mix flour, condensed milk, & nutmeg.
  • Step #7 Mix well.
  • Step #8 Pour over crust.
  • Step #9 In a medium bowl mix sliced nuts, coconut & white chips & reserved crumb mixture.
  • Step #10 Mix well.
  • Step #11 Sprinkle top evenly over filling.
  • Step #12 Bake for 35-40 mins or until golden brown.
  • Step #13 Cool completely.
  • Step #14 Cut in bars.
  • Step #15 Store in refrigerator.
