Crab Corn Pudding Recipe

Ingredients
  • 1/4 tsp white pepper
  • 1/4 c grated Parmesan cheese
  • 1/4 tsp ground nutmeg
  • 2 1/2 c frozen corn, thawed & patted dry
  • 1 tsp sugar
  • 2 tbsps butter or margarine
  • 1/2 c finely sliced green onions
  • 1 1/2 tsps salt
  • 3 tbsps all-purpose flour
  • 2 (6 oz) cans crabmeat - drained, flaked & cartilage removed
  • 1 3/4 c half-and-half cream
  • 6 eggs, lightly beaten

Directions
  • Step #1 Lightly grease eight 8-oz.
  • Step #2 custard c; set aside.
  • Step #3 In a skillet, saute green onions in butter until tender; set aside.
  • Step #4 Spread corn on an ungreased baking sheet.
  • Step #5 Bake, uncovered, at 350 degrees F for 20 mins.
  • Step #6 In a mixer or food processor/blender, mix corn & cream; cover & process for 1-2 seconds.
  • Step #7 Add the eggs, crab, flour, pepper, salt, sugar, Parmesan cheese, nutmeg & reserved onions.
  • Step #8 Cover & process 10-20 seconds longer.
  • Step #9 Pour into prepared custard c.
  • Step #10 Place c in a large baking pan.
  • Step #11 Add 1 in.
  • Step #12 of boiling water to pan.
  • Step #13 Bake, uncovered, at 350 degrees F for 45-50 mins or until a knife inserted near the center comes out clean.
