Easy Three Layer Pineapple Salad Recipe

Ingredients
  • 2 tbsps all-purpose flour .
  • 1 (16 oz) Cool Whip Topping, thawed .
  • 3 tbsps water .
  • 1 (20 oz) can crushed pineapple, juice reserved .
  • 3 tbsps lemon juice .
  • 1 (6 oz) package lemon Jell-O gelatin .
  • 3 c boiling water .
  • 3/4 c sugar .
  • 2 egg yolks, Lightly Beaten .
  • 1 (8 oz) package cream cheese, well softened

Directions
  • Step #1 Dissolve Jello in 3 c of water & add pineapple.
  • Step #2 Pour into a 13x9 glass dish & chill until almost set, about 45 mins - 1 hr.
  • Step #3 In a mixing bowl, beat cream cheese & cool whip until smooth.
  • Step #4 Carefully spread over jello & chill for 30 mins.
  • Step #5 In a saucepan over med-heat/flame, egg yolks & reserved pineapple juice & bring to a boil, lemon juice, water, mix sugar, flour, stirring constantly.
  • Step #6 Cook about 1 min or until mixture thickens then allow it to cool.
  • Step #7 Carefully spread above mixture over cream cheese layer & chill for at least an hr before serving.
  • Step #8 Cook time is chill time.
