Corn Pudding Recipe

Ingredients
  • 1 c milk
  • 1/2 c red bell pepper, sliced
  • 1 c sliced onion
  • ground black pepper to taste
  • 2 c whole kernel corn, drained
  • 1/4 c cornmeal
  • 1 1/2 tsps olive oil
  • 1 tsp minced garlic
  • 1 1/2 c shredded Cheddar cheese
  • 1/2 c crushed tortilla chips
  • 2 egg whites
  • 2 tbsps sliced fresh parsley
  • 1 egg
  • salt to taste

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Lightly grease a 2 quart casserole dish.
  • Step #3 Saute the onions, red bell peppers & garlic in the olive oil.
  • Step #4 Add the corn & continue to cook.
  • Step #5 In a another saucepan bring the milk to a simmer & slowly stir in the the cornmeal.
  • Step #6 Simmer for 2 to 3 mins, constantly stirring until thick.
  • Step #7 Remove from the heat & add salt & pepper to taste.
  • Step #8 Whisk the egg & egg whites together & slowly add them to the cornmeal mixture.
  • Step #9 Stir in the onion mixture, shredded cheese & parsley into the cornmeal mixture.
  • Step #10 Spoon mixture into the prepared casserole dish.
  • Step #11 Sprinkle top top this with more grated cheese & crushed corn tortilla chips.
  • Step #12 Bake for 40 to 45 mins or until firm.
