Fajitas Recipe

Ingredients
  • 2 tbsps cilantro (fresh is great!) .
  • 2 lbs boneless chicken breasts or steak or chuck roast .
  • 1 tsp crushed red pepper flakes .
  • 1 dried chipotle chile .
  • onions, as many as desired .
  • 2 tsps ground cumin .
  • 2 tbsps lime juice .
  • 2 tbsps brown sugar .
  • 2 c water .
  • green peppers, as many as desired .
  • 1 tbsp garlic .
  • 1 tbsp chili powder .
  • 1 tbsp liquid smoke

Directions
  • Step #1 Mix all ingredients, set aside 1/4 c.
  • Step #2 Marinade chicken or steak at least 3 hrs in remaining marinade (the longer you marinade, the better the flavor).
  • Step #3 Heat the barbecue grill! Grill your meat until tender (don't overcook, meat will be dry).
  • Step #4 When the meat is done, slice into desired sized pieces for your fajitas.
  • Step #5 Slice green peppers & onions into desired sized pieces & place this in a sheet of alumumin foil wrap that is large enough to wrap your veggies in, add in the remaining marinade.
  • Step #6 Wrap up tightly in foil wrap & place on grill.
  • Step #7 Cook until tender (20-30 min.
  • Step #8 ).
  • Step #9 Serve with warm flour tortillas, salsa, sour cream, cheese, anything your heart desires! I found that fresh pico de gallo works great.
  • Step #10 Pico De Gallo.
  • Step #11 4 fresh tomatoes, sliced.
  • Step #12 2-3 jalpenos (to suite your taste), sliced, remove seeds except for one.
  • Step #13 1/2-1 onion, sliced.
  • Step #14 1-2 T garlic, sliced (to suite your taste).
  • Step #15 1 T cilantro (preferably fresh).
  • Step #16 Dash of lime juice.
