Cranberry Layer Cake Recipe

Ingredients
  • 1 (18.25 oz) package white cake mix
  • 1/4 c finely sliced walnuts
  • 1 c finely sliced walnuts
  • 1 tsp vanilla extract
  • 1 (8 oz) package cream cheese, softened
  • 1/2 c butter or margarine, softened
  • CREAM CHEESE FROSTING:
  • 1/3 c vegetable oil
  • 1 tbsp grated orange peel
  • 3 1/2 c confectioners' sugar
  • 1 1/3 c water
  • 1 c fresh or frozen cranberries, thawed & coarsely sliced
  • 3 eggs
  • 1/2 tsp grated orange peel

Directions
  • Step #1 In a large mixing bowl, mix the first five ingredients; mix well.
  • Step #2 stir in the the cranberries & walnuts.
  • Step #3 Pour into two greased 9-in.
  • Step #4 round baking pans.
  • Step #5 Bake at 350 degrees F for 30-35 mins or until a toothpick inserted near the center comes out clean.
  • Step #6 Cool for 10 mins before removing from pans to wire racks to cool completely.
  • Step #7 For frosting, beat cream cheese, butter, in a small mixing bowl, vanilla & orange peel until mixed.
  • Step #8 Gradually beat in confectioners' sugar.
  • Step #9 Spread between layers & over top & sides of cake.
  • Step #10 Sprinkle top with walnuts.
