Hungarian Caffe Recipe

Ingredients
  • 1 quart of ice cold effervescent water .
  • 1 pint black coffee (very strong & fresh) .
  • 2 well beaten eggs .
  • 4 drops almond extract .
  • 4 tbsps heavy cream .
  • 1 c sweetened whipped cream .
  • 2 tbsps sugar (or to taste) .
  • 1 pint of shaved ice

Directions
  • Step #1 Brew coffee & place this in a double boiler.
  • Step #2 Mix the almond extract, eggs, sugar, & thick cream well.
  • Step #3 When the coffee reaches the boiling point, Temper the egg mixture by slowly adding 2/3 c of the hot coffee to it while stirring well.
  • Step #4 Return the tempered egg mixture to the double boiler while again stirring well.
  • Step #5 Cook only until the custard coats the back of the spoon.
  • Step #6 When perfectly cold, fold in a c of sweetened whipped cream.
  • Step #7 Add a quart of ice cold effervescent water & a pint of shaved ice.
  • Step #8 Serve in tall sherbet glasses.
