Apple Pecan Bread Pudding
Ingredients
1 (12 oz) package pitted frozen dark sweet cherries (you can also use a 16 oz. package) .
2 (12 oz) packages semisweet chocolate pieces .
1/2 tsp almond extract .
3 1/4 c whipping cream .
1/2 tsp ground cinnamon .
1/3 c butter, softened .
whipped cream (opptional) .
12 oz dark rye bread (bread sliced 1/2 inch thick) .
sliced almonds (optional) .
8 eggs .
3/4 c sugar
Directions
Step #1 Butter a 3 quart rectangular baking dish with some of the butter.
Step #2 Spread remaining butter on bread slices.
Step #3 Place bread slices in baking dish, if necessary, overlapping, to fit.
Step #4 Sprinkle top with frozen cherries, half the chocolate pieces, & the cinnamon; set aside.
Step #5 In a medium saucepan mix remaining chocolate pieces, 1 c of the whipping cream, & the sugar.
Step #6 Heat & stir till the chocolate is melted.
Step #7 Gradually stir in the remaining cream.
Step #8 Beat eggs in a very large bowl.
Step #9 Stir in melted chocolate mixture & almond extract.
Step #10 Slowly pour over bread in dish.
Step #11 Cover up & chill 2 hrs or overnight.
Step #12 Preheat oven to 325F degrees.
Step #13 Uncover bread pudding & place baking dish on a foil wrap lined baking sheet.
Step #14 Bake for 70 to 80 mins or until an instant read thermometer register 160 degrees when inserted into middle.
Step #15 Cool on a wire rack at least 45 mins.
Step #16 Serve warm.
Step #17 Garnish with whipped cream & almonds.
