Cod With Cherry Tomatoes And Spring Onions Recipe

Ingredients
  • 6 cherry tomatoes, per person .
  • cooking spray .
  • 1 spring onion, finely sliced per person .
  • good quality olive oil .
  • 1 piece cod fish fillets, per person .
  • salt & black pepper .
  • 1 lemon, juice of

Directions
  • Step #1 Preheat the oven to 190°C I have a fan oven so adjust to suit your own appliance.
  • Step #2 Cut a piece of tin foil wrap big enough to put your piece of fish on.
  • Step #3 Using a spray oil (FryLight) spray a piece of tin foil wrap before placing the fish in the centre of the foil wrap & wrapping the fish up like a parcel.
  • Step #4 This will stop the fish sticking to the foil wrap.
  • Step #5 Next cut the cherry tomatoes into small pieces & sprinkle it over the fish then do the same with the spring onion.
  • Step #6 Add the lemon juice & a drop of olive oil, season this with salt & pepper & wrap the parcel up tightly.
  • Step #7 You will now have a foil wrap parcel of fish ready for the oven.
  • Step #8 Cook in the middle of the oven for around 20 mins, checking after 15 by carefully unwrapping the top of the parcel & checking the colour & texture of the fish.
  • Step #9 To serve open up the parcels & place the fish on a plate using a fish slice before pouring over the tomato & onions & the juices.
