Linda's Corn Chowder Recipe

Ingredients
  • 1 (12 oz) can evaporated milk .
  • 1/2 c margarine .
  • 2 (14 3/4 oz) cans cream-style corn .
  • 6 slices bacon, fried, & crumbled .
  • salt & pepper, to taste .
  • 2 large onions, cut in 1/2, then thinly sliced .
  • 8 large potatoes, peeled, & cubed into 1-inch squares .
  • 2 (14 3/4 oz) cans corn, with juice .
  • 2 quarts milk

Directions
  • Step #1 In a lg.
  • Step #2 pot, put in potatoes, & onions, & 2 tsps salt.
  • Step #3 Add enough water to cover all.
  • Step #4 Let come to a boil.
  • Step #5 Boil about 15 mins.
  • Step #6 Drain out water, just leaving enough liquid to cover potatoes.
  • Step #7 Add corn & juice of corn, creamed corn, bacon, milk, & evaporated milk.
  • Step #8 Stir.
  • Step #9 Add stick of margarine, & stir as it melts, to mix inches Heat on med.
  • Step #10 for 20 mins.
  • Step #11 If you want to thicken the chowder, by adding about 1/2 c flour into 2 c COLD water, then add about 1/3 at a time into chowder, do so now, mixing well to remove lumps, until you get desired consistency.
  • Step #12 Add salt & pepper, to taste.
  • Step #13 Makes a big pot.
