Easy Pineapple Bread Pudding Recipe

Ingredients
  • 5 c bread cubes .
  • whipped cream (to garnish) .
  • 2 (14 oz) cans crushed pineapple, drained .
  • 1 c pecans, sliced .
  • 1 tsp ground cinnamon .
  • 2 c sugar .
  • 8 eggs .
  • 1 c butter, room temperature

Directions
  • Step #1 Preheat oven to 350°F & grease a 9x13-inch glass baking dish.
  • Step #2 Combine the butter, sugar, & cinnamon in a mixing bowl & beat until thoroughly mixd.
  • Step #3 Add the eggs & beat with an electric mixer until thoroughly mixed.
  • Step #4 Fold in pineapple, pecans & bread cubes.
  • Step #5 Pour into prepared baking dish.
  • Step #6 Bake at 350F for approximately an hr, until set.
  • Step #7 *Check after 45 mins to make sure top isn't getting too browned.
  • Step #8 If it is, cover lightly with aluminum foil wrap to finish baking.
  • Step #9 Serve warm, garnished with whipped cream.
