Corned Game Birds Recipe

Ingredients
  • 3 garlic cloves, sliced .
  • 1/2 c canning salt .
  • 2 quarts water .
  • 2 tbsps pickling spices .
  • 3 bay leaves .
  • 1/2 c mortens tender quick salt .
  • 3 tbsps sugar

Directions
  • Step #1 Bring all ingredients to a boil.
  • Step #2 Remove from heat & let cool.
  • Step #3 Take 2 1-gallon Freezer zip-top bags & place 5-6 lbs cleaned & skinned birds into each bag.
  • Step #4 Pour 1/2 cooled brine mixture into each bag.
  • Step #5 Get out as much air as possible & seal bag.
  • Step #6 I place each bag into a second bag just incase it gets a leak.
  • Step #7 Put in refrigerator for 5-7 days turning bags every day.
  • Step #8 Remove & drain liquid.
  • Step #9 Cook as you would corned beef.
  • Step #10 Place brined birds into a large pot with fresh water & boil on low for at least 30 mins.
  • Step #11 The longer they cook the more tender the meat gets.
  • Step #12 Serve hot with boiled potatoes & cabbage or chill & pull pieces off & use them like lunch meat.
