Walnut Chicken Recipe

Ingredients
  • 1/3 c sliced green onions .
  • 1/4 c soy sauce .
  • 1 tbsp dry sherry (I used cooking sherry because that was all I had.) .
  • 1 garlic clove, cut in half .
  • 1/2 tsp ground ginger .
  • 3 tbsps vegetable oil .
  • 1 lb boneless skinless chicken breasts, cut into 1 inch pieces .
  • 1 c walnuts, coarsely sliced

Directions
  • Step #1 Combine soy sauce, add chicken pieces, sherry & ginger in a medium bowl, mix & let this stand for 15 mins.
  • Step #2 Heat a large skillet; add 2 tbsps of oil & heat until smoking.
  • Step #3 Add green onions, garlic & walnuts.
  • Step #4 Cook 3 mins, stirring often.
  • Step #5 Discard garlic & spoon walnut mixute into a small bowl & reserve.
  • Step #6 Add remaining oil to skillet & heat.
  • Step #7 Add chicken & soy mixture & stir-fry until chicken is done & coated with the soy mixture.
  • Step #8 About 5 mins.
  • Step #9 Add reserved walnut mixture & stir this to mix.
  • Step #10 Serve with rice or mashed potatoes.
