Step #2 Mix olive oil, pepper, salt, zest & juice of orange to make a paste, crushed fennel seeds, massage into chicken.
Step #3 Toss left over orange pieces into cavity of chicken.
Step #4 In a sauce pan mix orange juice, brown sugar, sliced apricots, soy sauce, 1/2 c of water & crushed red chili peppers, simmer for 10 mins or until apricots soften.
Step #5 Take off heat.
Step #6 In a separate bowl mix 2 tbls cornstarch with 4 tbls of water & add to mixture in sauce pan.
Step #7 Roast chicken in a 400F degree oven for 30 mins uncovered.
Step #8 After 30 mins reduce heat to 350 degrees & continue to roast another 30 to 45 mins or until internal temp of chicken is 180 degrees.
Step #9 During the last 15 mins of roasting, baste chicken with orange
juice mixture.
