Authentic Hummus Recipe

Ingredients
  • 1 lemon, juice of, only .
  • paprika (optional) .
  • 3 tbsps tahini .
  • parsley, sliced (optional) .
  • 1-2 garlic clove (use smoked garlic if you can get it) .
  • 1/8 tsp salt .
  • 1/3 c water .
  • 1-2 tbsp olive oil .
  • 2 (16 oz) cans garbanzo beans, which equals about two c drained (chick peas)

Directions
  • Step #1 Drain & rinse garbanzos.
  • Step #2 Do NOT use can juices for the liquid in this recipe.
  • Step #3 They 'muddy' the flavour of the end result.
  • Step #4 Put garlic, tahini & salt in a mixer or food processor/blender & buzz until ingredients are well mixed (10-15 seconds).
  • Step #5 Add garbanzo beans (one can at a time) & mix after each addition.
  • Step #6 You can reserve a few whole beans for garnish.
  • Step #7 Add lemon juice & mix.
  • Step #8 Add as much water as you need for the consistency you like.
  • Step #9 I usually use it all, unless the lemon is ultra juicy.
  • Step #10 Spread hummus on a flat plate.
  • Step #11 Create a bowl shape by elevating the edges with hummus.
  • Step #12 Drizzle olive oil over the hummus, sprinkle with paprika & garnish with reserved whole beans & sliced parsley.
  • Step #13 Serve with flat Arabic bread.
  • Step #14 It's nice to toast the bread lightly in the oven.
